Avocado and Shrimp Couscous Salad
I’m trying to eat all the stuff in the fridge before I leave next week for a trip. I really hate wasting food so I had my meals planned out this week so nothing would go bad. All I needed for my meticulously planned week was some fresh basil but thanks to my speedy (and careless) grocery shopping trip, I grabbed the pack of mint instead. I don’t know why I didn’t bother to look. In the end, grabbing the mint wasn’t a bad thing because I made this [leftover] couscous salad this evening that basically used up a lot of the “odds and ends” left in my fridge.
