DIY Super Easy Mini Cherry Cheesecakes
My niece April and I made these cute little cheesecakes yesterday. They were delicious! I think these would be cute to serve at a bridal shower or even at a DIY wedding.
Here’s the recipe:
2 pkg. (8oz.) cream cheese, softened to room temperature
3/4 cup sugar
1 Tbsp vanilla
1 Tbsp lemon juice
Cherry Pie Filling
2″ aluminum mini baking cups
Hint: Mini cups come in several sizes so be sure to use the 2” so the wafer fits in perfectly…use foil cups so you place them on cookie sheet rather than muffin pan.
Place a vanilla wafer in each mini baking cup.
Spoon approximately 3 Tbsp of cream cheese mixture over each wafer. Makes about 4 dozen.
Bake at 350 for 15-20 minutes. Let cool and top with cherry pie filling. Refrigerate.
