When its grey and rainy outside, invite the sun in with some delicious, brightly coloured citrus fruits.  One of my faves is pink grapefruit!

  • Super high in antioxidants, namely lycopene
  • Rich source of vitamin C
  • High in fat burning enzymes which aid in weight/fat loss
  • Lowers cholesterol
  • Contains high source of dietary fiber to promotes better digestion

Zain’s Ruby Emerald Salad:

Ingredients:

1 Cup Mixed Greens

1 Pink Grapefruit (cut in wedges)

1/4 Avocado (sliced)

1/4 Red Onion (sliced)

1 Tbsp Hazelnuts (I like to roast mine)

1oz Buffalo Mozzarella Cheese OR Low-Fat Feta Cheese (optional)

Dressing

1 Tsp Miso Paste

1 Tbsp Apple Cider Vinegar

Dash of Braggs

1 Tsp Raw Honey OR Coconut Sugar (optional)

Juice of 1/2 Lemon

1” Ginger (minced)

Himalayan Crystal Salt & Black Pepper to Taste
