I came home from Trader Joe’s and Fred Meyer with Emily and Brooke and Tay and Oliver had installed his Total Gym he got for Christmas in his doorframe and Tregan had “Pump Up The Jam” queued up on their laptop and when we got upstairs Tregan hit play and Oliver put on flashing glasses and did pull ups on the bar in a vest and booty shorts while Locky did push ups and then they screamed “switch!” and traded places a few times and it was simultaneously hands down the manliest and least manly thing I have ever seen.

DOUGH
2 cups plain flour
1/2 teaspoon dry yeast
1 teaspoon salt
approx. 4 cups lukewarm water
OR JUST BUY IT PRE-MADE (WINCO SELLS PRE-MADE DOUGH)

SAUCE
2 cups chopped tomatoes
2 garlic cloves
1 tsp dried oregano
1 tsp sugar
salt and pepper
OR JUST BUY IT PRE-MADE

FILLING
pepperoni
mozzarellla cheese

Preheat the oven to 390 F
(original recipe calls for 200 degrees Celcius which is about 392 Farenheight - you could round up to 400 but keep an eye on them when you bake them so they don’t burn / adjust time accordingly)

Make the dough:

Stir flour, yeast and salt together. Add enough water until you have a smooth dough. Knead the dough well before adding it a warm place and let it rise until it has doubled in size, about. one hour.

[or just use pre-made dough]

Make a tomato sauce:

Use a hand blender to run the tomatoes smooth. Put the tomatoes in a pan with skrellte garlic cloves (keep the whole), oregano and sugar. Boil it up, reduce the heat and simmer while the dough is rising. Season with salt and pepper and let the sauce cool. Fish out the garlic cloves.

[or just freakin use pre-made tomato sauce!]

Then:

Roll out dough and press out circles with a the rim of a glass. Make sure the circles are larger than the size of the muffin tin openings, pizza should like to have a little edge. Put them into the muffin mold and press them slightly toward the edge. It’s ok if they sink down and are slightly uneven!

Add a small pinch of cheese in the bottom of each pizza. Add the pepperoni (shredded if you want) and a tablespoon of tomato sauce on top.

Add a good pinch of cheese on top and place the shape muffins in preheated oven.

Bake for 10 minutes (or until cheese browns and bubbles)

That little pizza muffins recipe is translated from Norwegian and at one point the directions say “Make sure the circles are larger than the size of the muffin tin openings, pizza should like to have a little edge.”

'Pizza should like to have a little edge' for cutest sentence of 2012
