Now this is what makes Sundays perfect! |Vegan Dark Chocolate Chip Almond Butter Pancakes with Homemade Almond Butter Glaze. PANCAKES •2cups all-purpose flour •1cup old-fashioned rolled oats •1¼teaspoons baking powder •¼teaspoon baking soda •¼teaspoon salt •½cup vegan dark chocolate chip •2½tablespoons homemade almond butter •1¼tablespoons organic honey •1cup plain soy yogurt •1½cup homemade almond milk •4 tablespoons virgin olive oil ALMOND BUTTER GLAZE •3½tablespoons homemade almond butter (melted) •2 tablespoons organic maple syrup •1 organic vanilla bean/ 1 teaspoon vanilla extract Melted almond butter and stir in maple syrup and vanilla bean. Serve it over hot pancakes

Ingredients

  • ½ cup vegan vanilla protein powder (like Sunwarrior)
  • 2 tablespoons coconut flour
  • 1 tablespoon melted coconut oil
  • 6 to 8 tablespoons water
  • Liquid stevia to taste (optional)

Instructions

  1. In a small bowl, combine the protein powder, coconut flour and oil, and 6 tablespoons water and stir very well to combine (the mixture will be extremely thick). If it becomes too dry to mix properly, add more water, a tablespoon at a time (you may add up to 2 more tablespoons). Taste for sweetness and add some stevia, if desired.
  2. Roll the mixture into four small balls and refrigerate until firm.

Oatmeal Raisin Cookies!  These are so good but you definitely need the maple to get that traditional oatmeal raisin cookie tastes so don’t skimp on that and use some other syrup! The cookies are chewy and the texture is perfect, you can even add some roasted walnuts in it if you wanted to.
