BREAKFAST: SOY YOGURT WITH KIWI, PERSIMMON AND BANANA

Actually woke up early enough to make/eat/enjoy breakfast before class. Super simple, coffee with some almond milk and plain soy yogurt with kiwi, banana, persimmons, ground chia seeds, hemp seeds, dates, slivered almonds and cinnamon. Definitely a nice start to the day.

Vegan cinnamon roll pancakes 💖
Theres a little bit of maple glaze on the pancakes as well. It’s so crispy, fluffy, and perfect. 

Ingredients:

Pancakes

  • 2 cups flour
  • 3 tbsp sugar
  • 3 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 cup alternative milk (I used soy)
  • 2 tbsp melted coconut oil

Cinnamon swirl

  • 2 tbsp melted coconut oil
  • 3 tbsp light brown sugar
  • 1-1.5 tbsp ground cinnamon

Directions:

  1. Sift flour, sugar, baking powder, and salt together into a medium bowl.
  2. In a measuring cup, combine the milk and vanilla extract.
  3. Add the vanilla milk and oil to the dry ingredients.
  4. Mix with a whisk until combined. Clumps of flour are ok, the batter should not be beaten until smooth or else too much gluten will form and your pancakes will be chewy. If using gluten-free flour do whatever you want.
  5. Let batter sit for 5 minutes.
  6. Prepare the cinnamon swirl by pouring the melted coconut oil, sugar, and cinnamon into a plastic bag. Massage the bag to combine. Cut a very smal portion of the tip off to make a piping bag.
  7. Pour about 2 ox of the batter into a greased pan over medium heat. Take the makeshift piping bag and slowly pipe the cinnamon mixture in a spiral from the inside out.
  8. When bubbles form and pop at the edges of the pancake, flip and cook for approximately 90s.
  9. Serve with a quick powdered sugar glaze or maple syrup and enjoy!

Makes about 12 pancakes.

ALMOND BUTTER BANANA ROLL UPS

Another quick, easy and delicious snack. I took one whole grain tortilla, spread half a tablespoon of almond butter, sprinkled raw cacao powder and cinnamon. Half a medium banana from earlier this morning cut in half and then sandwiched between blueberries! Place the banana on the far side of the tortilla and roll up. Trim the excess tortilla bits off and slice into bite size pieces.

RICE CAKE WITH ALMOND BUTTER AND SLICED BANANAS

My go to snack at the moment (makes a great quick breakfast too). One plain rice cake with half a tablespoon of almond butter and half a medium sized banana. Sprinkle with cinnamon and a TINY bit of salt, as well as some grated organic vegan dark chocolate. Delicious.
