Birthday Cake Ice Cream
Recipe adapted from @livegreenhealthy’s page.

I used:
3 frozen bananas (sliced)
1 tablespoon of vanilla extract
1/2 teaspoon of butter extract
1/4 teaspoon of almond extract
1 teaspoon maple syrup
1/4 teaspoon baking soda
1 tablespoon agave nectar
1 tablespoon of melted coconut oil (to help solidify when refreezing before scooping to serve
1. Blend bananas until smooth
2. Add extracts, blend
3. Add agave, baking soda and coconut oil- blend
4. Freeze until firm
5. Scoop out and enjoy

How did you guys spend your valentines day? With the people you love? With the food you love? haha yep…priorities. 

I tend not to take part in many ‘hallmark’ holidays. Me and my boyfriend make an effort to enjoy every day together and go out for dinners when we want to etc. so last night we stayed in, made dinner together and most importantly ate some cake. 

It wasn’t heart shaped, and it wasn’t strawberry filled…but for me, carrot cake is a good cake any day of the week, any time of year. 

Heres a super simple low fat recipe I threw together for us, and for you. 

Crust:

  • the crust is dates and mulberries on half (my side)
  • the other half is dates, cashews, pecans and mulberries (his side)
  • its a day about compromise right?? haha

Filling:

  • once your crust is pressed down grate carrots and add them to your food processor with about 5-10 medjool dates, cinnamon, nutmeg, and a handful of raisins. 
  • pulse until combined with a few raisin chunks
  • add half this mix to your pie pan!
  • next I added a layer of nutmeg banana ‘icecream’, simply two bananas with a fair amount of nutmeg and a few raisins 
  • I poured this layer on and let it set in the freezer while I showered, the shower is optional but let it set for presentation reasons
  • next I added the other half of the carrot mixture
  • on top you could add a cashew based ‘icing’ or stick with the lower fat option like me and use banana, young coconut, and vanilla. 
  • Store in freezer and place in fridge before eating :) 
  • yum.

Vegan Dark Chocolate Chunk Oatmeal Bars


I’ve been craving oatmeal chocolate chip cookies UNTIL I came across this recipe and started craving oatmeal chocolate chip bars instead. I’m completely obsessed with oats and chocolate so this combination is basically my own personal heaven. Throw in some tea and peanut butter and I’m set for life. These bars are perfect. Like seriously; they’re gooey yet crumbly and have all the flavour I could ask for. 

Here’s the recipe for you

I did make a couple modifications though so I’ll post my version of the ingredients for you too: 

  • 2 1/2 cup old fashioned oats
  • 2 cups sprouted spelt flour
  • 1 cup coconut sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil, melted 
  • 1/2 cup well mashed avocado
  • 2 flax eggs
  • 1 tablespoon vanilla
  • 8 ounces dark chocolate, chopped into chunks (about 1 1/2 cups)

S’mores Pudding Pie & S’mores Pudding in a Jar
- plant based, vegan, gluten free -

This chocolate pudding recipe can be made into a pie or into layered individual parfaits. For the pie recipe, mix the following pudding and whipped cream recipes together and put in a graham cracker crust. Chill, then cover with marshmallows and put under the broiler for a few minutes. For the pudding parfaits, layer the pudding with crushed graham crackers, followed by the coconut whipped cream, top with marshmallows and then out under the broiler. Enjoy!

Chocolate Pudding
1 ripe avocado
1 ripe banana
5 tbs cocoa powder
2 tbs maple syrup
1 tsp chocolate extract
1/4 teaspoon cinnamon
1/2 cup coconut milk

Blend ingredients well. Chill before serving.

Coconut Whipped Cream
1 can full fat coconut cream
Sweetener if choice (I like liquid stevia)

Place can in fridge for few hours. Remove from fridge, turn upside down and open. Pour the thin liquid into container and put aside (you can use later in smoothies). You will be left with the thick cream in the can. Put thick cream into bowl, add sweetener and whip with mixer until light and fluffy. Chill before serving.
