Grill, roll, bake, voila!!! This meal is a vegetarians dream!!! I was in a bit of a funk so I thought I would come into my element and create something new…this grilled zucchini is rolled with home made broccoli pesto. Yes, you heard it right!! I puréed cream cheese, broccoli, garlic, onion, some special seasonings and a few other things and spread it across the grilled zucchini. Rolled it with red pepper for fun and baked it until the cheese got all melty and the flavors married! Then I made some home made marinara, topped it with some sweet yellow heirloom tomatoes and a few drops of cream for an extra depth of flavor. I wish this picture truly justified how amazingly delicious this meal was. I am trying to keep it humble, but this meal truly was five star restaurant worthy! So first I rubbed this fresh salmon in truffle oil and then I bathed it in parmasean and fresh herbs and let it broil until it was crisp at the top. Then I boiled the organic cauliflower I got at the farmers market until it was fork tender. I tossed the cauliflower in the food processor with some cream cheese, parmasean, and a drizzle of truffle oil to carry over the flavor and blended it. OMG I may never eat mashed potatoes again!! They were so creamy and delicious I couldn’t stop licking the spatula! Last but lot least I sautéed some zucchini with onion and garlic in a little butter. I served this meal with a caprese salad made with fresh mozzarella and organic heirloom tomatoes drizzled with a raspberry balsamic I got at the farmers market as well. The flavors in this meal, the textures, the colors, and the sound of others saying “mmmmm” as they ate is why I became a chef.
