Ever since I divided the rhubarb crown, this 1.5m2 patch has been delivering more than we can use: the neighbours get bags of it, we get a lot of Strawberry-Rhubarb pies and crumbles, and every time I thin it out, a bag goes in the freezer for winter.

I spread out the huge leaves over other places in the garden, where they rapidly decompose into soil nutrition.

Appetizer idea: Strawberry salsa

Want to try a refreshing twist on the typical chips and salsa appetizer?

Instead of a tomato-based salsa, try a sweet and spicy version using strawberries. This is what you’ll need:

  • pint of strawberries sliced into bite-size pieces
  • 1/3 of a red onion, finely chopped
  • 1 jalapeño, seeds removed, finely diced (leave more seeds in if you want your salsa to be spicier)
  • handful of cilantro, finely chopped
  • 1 lime, juiced
  • salt and pepper to taste

Mix all the ingredients together and serve with Lunds & Byerlys Extra Thin Restaurant Style Tortilla Chips. Delicious with a Vinho Verde.

The tequila-lime dressing compliments the nutty and fruity sweetness of the salad by adding a refreshing brightness to it. It’s a classy way to consume tequila, amiright?
