This was inspired by Benji (Judy’s husband, from it’sjudytime/it’sjudy’slife/it’smommy’slife, and benjimanfood). I marinated portabella mushrooms in soy sauce, sesame oil, srircha sauce, black pepper, crushed fresh garlic, and red chili flakes. Took some chicken stock added salt, pepper, and a little water to tone it down somewhat. Cooked some noddle (Fetteccinie ones since I had no ramen noddles on hand). Cut some carrots, red pepper, orange pepper, scallions up as well. Grilled the mushrooms and cut them into strips. I poached an egg and topped it off. This was the result. =)
