Gooey, melty, delicious CHEESE

I was a single gal this weekend. Mitch was back at home with this little guy -

We had a wonderful weekend together :)

I had a great weekend with friends, but I always came back to this little guy. He is too hard to leave at home alone!

We made some wonderful treats this weekend though…

I found the most incredible ingredient on Friday and haven’t been able to put it down.

Cheese.

I must admit, I have deprived myself of cheese my whole eating healthy life. I see it as a cheat food and a guilty pleasure. And I LOVE cheese. I love melted cheese and I would put it on about anything.

Well I have found something even better.

Almond cheese. Yes, cheese made of almonds. I have to say, it is the most deliciously amazing thing I have ever tasted.

Look at it MELTED in my chicken quesadilla. Wait, what? I had a quesadilla and it fit in my macros? Sure did people.

1 oz (which is plenty enough) is 50 calories, 1 g of fat, 190 mg of sodium, 3 g of carbs, and a whopping 9 g of protein. Hello amazing.

And its gluten free, lactose free, no GMO’s and NO preservatives. They have lots of different flavors and apparently have a shredded version. I found this jalapeno jack flavor at Yes! Organic Market but saw lots at Whole Foods as well. GET IT.

These have been my lunch the past two days and I had these two days in a row for a reason!

What you’ll need:

2 corn tortillas (Food for Life has the best kind that crisp up so nicely in the oven)
4 oz lean ground turkey
1 oz Almond Cheese
Toppings of your choice

I was browsing through fellow blogger Crystal and her amazing blog Spoonful of Fit and she had this great idea - to make taco shells out of our approved corn tortillas.

Heat your oven to 400. Drape your tortillas over the vertical rails of your baking rack like this -

Once they are nice and crispy (about 5-10 minutes) add your toppings. I heated up my turkey with the almond cheese and it melted perfectly. The best thing about these homemade shells is that they don’t break like the store bought ones.

And they’re damn good.

REVIEW: The Simply Bar and Simply Chips

Earlier this fall, I received a nice package from the people over at The Simply Bar. I had seen these bars all over the place - even ordering a package of my own a few months ago. Then, they came out with CHIPS! I immediately bought some Chili flavored ones and loved them - they were delicious, crispy, perfect.

Well, I was so curious the try the Herb flavor as well as a few of the other Simply Bar flavors that so many bloggers have always said were so divine!

First, a little about these products.

A little blurb from the company:

It is unique in that it has the most protein for the least calories. What’s best about all our high protein snacks is that they are all gluten-free, vegan, kosher, all natural, and suitable for a variety of dietary needs. They are easy to digest and are perfect for celiacs, athletes, mothers, and vegans.

Yes. You read that right. They are gluten free, vegan, KOSHER, no added sweeteners, no high-fructose corn syrup, no maldexidontknowwhatthisis ingredients!

I don’t like to eat a lot of pre-packaged protein goods. You never know what you’re eating. And when you read the back to find out, it often doesn’t make what you’re eating any clearer!

These are different.

We’re talking pretty good bang for you buck here. For only 160 calories, you get 16g of protein! Looking at ingredients, it is from a soy protein isolate. Not too shabby! I typically like to stay away from brown rice sugar, as it is not as good as more natural sweeteners such as honey. But much better than certain fake sugars such as aspartame or even just plane SUGAR.

As far as the chips go, pretty good as well!

Protein from pea protein isolate - I like. The only thing that I do not like is the Natural Cane Sugar. Like I have said in posts past, I am trying to stay away from my sugar intake. Sticking to stevia and honey, and of course fruit, has been really working for me! But again, this bag has 2 g of sugar. Sugar in very little moderation is okay! And these are freakin delicious. Just don’t eat a bag everyday if you’re concerned about where your sugar is coming from! 

Now - about the flavor.

I have to say, my favorite bar is the Cinnamon Pecan!!

Before trying it,  I had my doubts. I really love the chocolate peanut - which I had tried before. I’ll admit, I am a chocolate, peanut butter, caramel girl. But honestly, this flavor takes the cake! Seriously, tastes like cinnamon toast crunch in a bar. And healthy. I am going to buy my own box of these, crumble them up and put in almond milk, just like cereal. I promise you it wont disappoint. LOVE THEM.

As far as the chips go, after trying both flavors, Chili still turns out to be my favorite!

The perfect kick of heat and tang of sweetness. A lot comes in a bag - can’t beat that! They are also great toppers for salads and in soups. So versatile!. And, they are boyfriend approved. I don’t like to eat pre-packaged protein sources everyday, so it did take some time to try out every flavor. Well, everyday I swear Mitch was asking if he could have the last bag of these. Everyday. He loves them!

Overall, The Simply Chips and Simply Bars are the real thing. They are great for not only a clean eating lifestyle, but for people trying to watch those ingredients!! They are great for on the go snacking, traveling, or everyday if that is for you! I give them 10/10 for taste and 9/10 for what’s in them (simply due to sugar sources - that’s it!).

Not your average bag of Lay's

I found this great brand of protein bar not too long ago that are super clean - The Simply Bar! Although I do prefer to make my own protein goodies for the day, I love my simply bars for on the road, or rushed days!

Well guess what I found? The Simply Protein Chips.

Wait, what? I know we have all heard of protein bars, powders, just about everything else. But chips? I know, these people are genius!!!

They are a new item the brand is making, so I just had to buy a box!

The Stats:


Price: They were $12 for 24 bags - not bad! They also have them in sets of 2’s to try out (I believe for a short amount of time).

Ingredients and nutritional facts: AMAZING.

So for 140 calories, you get 15 g of protein, 2 of sugar (from natural cane sugar), and only 4 g of fat. That sure beats bag of Lay’s! I love me some Pop Chips - but these have less ingredients, MORE in the bag, and have protein!

Ingredients wise, the source of protein lays in pea protein isolate. How cool is that!? You have some natural sugar, some canola oil, and a little seasoning. I can pronounce ever single item, AND I know what it is! Does your bag of chips sound the same? I doubt it.

They look a lot like Fritos, and have the exact same texture. Super crunchy and don’t taste fake/too healthy (lol). I bought the Sweet Chili brand and its the perfect punch of heat and a tad sweet. SO good. They have another flavor - Herb - that I am wanting to try soon as well!

But seriously, these are SO good! And the bag is FULL of them. You aren’t getting 8 chips like I often find is the case with Pop Chips. Sure, these are smaller than Pop Chips, but I’m the type of person that SEES more in the bag and is instantly happier/more satisfied #fatty #ilove food !

Where to buy: The only place you can buy is on their website. You can also buy their bars here - which I love. I want to try all the flavors!!

Some HIIT Treadmill Action!!

I also have a KILLER treadmill workout I did yesterday! Yesterday was chest day, but since I had a super early morning and I couldn’t get in my morning Insanity/Cardio, I had to do both after work (which I DETEST!!). After about 30 minutes upstairs with weights, I did this on the treadmill, incorporating chest throughout:

These are your basic 30 seconds on (SPRINTTT), 30 second off HIIT (high intensity interval training); but instead of just stopping for 30 seconds, you’re going to do PUSH-UPs. Sounds fun, right? Well its great! Keeps your heart rate up while also working your chest. So I did 30 seconds on 10 (my sprints have gotten super fast!), and then 30 seconds I hoped off the treadmill and tried to complete atleast 10 push-ups in 30 seconds. That’s easy peasy! You should really be doing 20, but 10 is a good place to start. So that means, If you’re doing 10 pushups 4 times for 5 rounds, thats 200 push-ups JUST doing your cardio. And you get this in for about 40 minutes (depending on how long you cool down of course!)

LOVE this workout. Next time, I am going to focus on another muscle group, like my shoulders! Enjoy!
