I can’t wait for tomorrow so I can have it again All I did was blend frozen ripe bananas(I did not add any liquid) for the nicecream. The date sauce was dates with lemon and water. The recipe for the rawnola is from @lonijane’s book #feelthelean with added essential orange oil. Passion fruit and strawberries too. By far my favorite nicecream combination! I’m really enjoying this weekend, because of the IIN Live event I am watching and I just could not be happier that I am in this beautiful field of health. So far to this day there are only 60000 health coaches working so I really feel like we are pioneers and I am incredible lucky to be part of this. I feel so grateful, thank you @nutritionschool💖

1. Generate less waste
Food that is thrown out can end up in landfills. When food decomposes it produces methane, a greenhouse gas that contributes to climate change. Store food properly to prevent food spoilage, freeze or plan to use leftovers instead of throwing them out, and buy only what you need. Remember to eat and cook consciously and wisely #consciouseating
2. 💦Use less water
Conserve water by steaming or baking veggies instead of boiling them

3. Use less energy
Challenge yourself to make a snack or meal that requires no cooking aka #rawfood
4. 🍃🍀Enjoy a meatless meal

I wanted to try something new for breakfast. Apples. Apples are fruits I usually overlook. Beautiful, but I always thought of them as boring. So I challenged myself to have a monomeal of apples. Why? Because apples are available year round, because you can get good quality local apples in Scandinavia and to add variation. Before I set down with my apples, I said a little prayer, I said that I was looking forward to eating them and that I was forever grateful that mother nature as created such a perfect food. Having an open mind is key when trying something new. My boyfriend did not think much of cucumbers before he met me. But I spent huge parts of my child hood on a cucumber and tomato farm(we had many other plants as well but cucumbers and tomatoes were grown for sale), so even when I eat blend store bought cucumbers I still remember the joy of having one straight from the plant. So I always have them in my cooking and now Johan likes them too. My point is that I think giving familiar food a chance is important. There is so much we could be missing out on! There are so many vegetables I used to cook with and I no longer eat that many cooked foods, so instead of cooking them I can spiralize them! On this journey I am getting to know how fruits and veggies taste all over again. Even though I know what every single vegetable is in the grocery store, there is still a long way to go with experimentation. This is only the beginning. I came back home from my spinning session and felt really tired. Had a mango, passionfruit and orange smoothie. Followed by 1L water and an early dinner. Started with this salad of beet sprouts, mixed greens and tangerines. I just love undressed greens with acid fruits. Because I did not have enough ripe fruit I had baked potatoes with a chili sauce instead. Can’t rave too much about it though, as I fell asleep short time after I was done eating. Whenever I have a cooked dinner lately I either feel tired or fall asleep. But even though all signs point towards raw(there are a few other things I am not including in this post), I for some reason have a hard time being fully raw this time. I think it’s mental. I wish it was easy like it was before. I feel strange right now, because I feel like it should be easier, like I should have already gotten passed this stage, yet I see how far I have come during this past year and think that I should not be so hard on myself. Actually I think it comes down to planning as well, of course I run into trouble if I do not stock up and yes it’s easy to fall into old habits when unprepared. Now I see that I should have just gone out fruit shopping before dinner. Lesson learned. At least I now have enough fruit for the next few days. Maybe it’s the stress I’ve been under lately. I always do my best at turning negatives into positives. Pressure creates diamons, so I’m excited to see what comes next. Again, I’m letting go of perfection, being honest and #fullyreal here. One of the things that scare me with my honesty is that maybe in the future people may not want to work with me. But I know that these thoughts are false and honesty has more bennefits. Listening to insecurities is like taking two steps back. It’s what’s in our hearts that counts.
