The first two days of my paleo diet were pretty rough. I didn’t have a chance to go food shopping so I was doing my best to buy snacks or meals that fell under the paleo rules. Finally, yesterday, I was able to do a big trip to kickoff my diet and I bought the following items:
- Almond milk
- Coconut milk
- Frozen fruit
- Lara bars (in non-chocolate/peanut butter flavors)
- Steamfresh veggies
- Grass-fed thinly sliced chicken
- Almond flour
- Shredded carrots
- Lemon juice
- Almond butter
With my items in tow, I created a weekly meal plan for the rest of the week (and possibly next week if I have leftovers!)
- Breakfast: Morning glory muffins or Smoothie
- Mid-morning snack: grapes or raisins
- Lunch: spinach salad w/ cucumbers, almonds, shrimp
- Mid-afternoon snack: hard boiled eggs or lara bar
- Dinner: veggies & chicken stir fry or omelette
With my meal plan set, I now feel more in control of this new diet and actually excited to try new recipes and a new routine (and to see the effects take hold in my training). Since paleo is all about preparation, I got to work on making my first Paleo recipe.
PALEO MORNING GLORY MUFFINS
Lightly adapted from Paleo Comfort Foods Cookbook by Julie & Charles Mayfield
2.5 cups almond flour
1 tablespoon cinnamon
½ teaspoon salt
2 cups shredded (organic) carrots
1 large (green) apple grated (optional)
1 cup shredded coconut
1 cup raisins
3 large eggs
2 tablespoons agave nectar
½ cup oil (Coconut oil recommended but olive oil works!)
1 teaspoon vanilla extract
Preheat oven 350, grease muffin pans.
Combine first almond flour, cinnamon, salt & carrots in a large bowl.
Add apple, coconut and raisins then stir.
In a separate bowl whisk eggs, agave nectar, oil and vanilla extract. Pour into dry bowl and mix well. This will be very thick.
Spoon into trays and cook on the middle rack for 20-30 minutes (start checking at 15 minutes). To test, stick a toothpick in a muffin; if it comes out clean they’re done.
- Let cool and remove. Store them for easy access!
My friend recommended you eat one per serving so I have been having it as a snack or even a meal because they fill you up but are so delicious! I burnt mine a little bit because I forgot to follow the directions and check on them frequently so make sure you stay on top of it! They really are fantastic :)
