Week 2, Day 5; Dinner!
I don’t know how to describe this pasta. I’m still guzzling it all down right now.

Pasta sauce:

Broccoli:
-4 bushes of broccoli, washed 

——>Bring a pot of water to boil with some butter and salt, then add the broccoli in and leave for 10 minutes on high heat.
-Strain, let it cool and cut it up finely.

Rest of the sauce:

Ingredients:

-1 tbsp butter
-1 tbsp olive oil
-1 onion, diced
-8 cloves of garlic, diced
-1 baby carrot, peeled and chopped up finely (or 1/2 a normal carrot)
-4 tomatoes, sliced
-4 button mushrooms, sliced
-1 baby carrot stalk (the stem), chopped up finely
-4 leaves of spinach, chopped up finely
-1 glass of milk 
-2 slices of cheese (I use Ementhal, but any other type is fine too, as long as it’s not Mozzarella (too stringy))
-some orange zest (optional)
-a handful of parsley, diced
-1/2 tbsp mixed herbs 
-salt, pepper, (to taste)
-chilli powder and chilli flakes, to taste (optional)
-handful of macro-green salad, for decoration (optional)

Method:

-Get a large frying pan and put on medium heat, adding the butter and olive oil to it, along with the garlic and onions. Leave on heat while mixing every now and then until golden-brown.
-Now add in the carrots and tomatoes, and leave on low-heat for 10 minutes.
-Add the mushrooms, carrot stalks, spinach, and chopped up broccoli. Mix. Change the heat to medium and leave on for 1 minute.
-Now add the glass of milk and put the heat on low.
-While stirring, add the cheese and keep stirring until a good thickness forms (this should resemble something thicker than milk but not thicker than fresh cream).
-Once the cheese has dissolved into the milk and the mixture is done, add the orange zest (optional), salt, pepper and chilli powder/chilli flakes (optional), followed finally by the mixed herbs on top. 
-Mix and serve on top of the pasta.

Pasta:

Ingredients:

-3 rolls of egg pasta (they should come in rolls or balls, or just take 150-200g, depending on how much you can eat)
-1 tbsp olive oil
-1 tsp salt

Method:

-Fill a pot full of water, adding the olive oil and salt to it. Wait until the water boils before adding pasta.
-Leave the pasta in, on medium to high heat for 10 minutes, stirring every 3 minutes.
-Once done, strain, pour a little more olive oil over and place into a bowl, followed by the pasta sauce and macro-green-salad (optional) (and meat, if you want).
