Simple, easy and healthy French Toast Recipe

Nutrition facts:

Calories: 540

Protein: 35g

Carbs: 60

Fat: 18

When it comes to cooking, I like things simple. The moment I see too many ingredients and a long cooking process I lose interest. This simple recipe below needs less than 10 ingredients and the prep time is less than 5! Forget about your boring egg whites and oatmeal and make breakfast a fun treat for yourself.  

This recipe is so easy and it can be made in a rush in the morning before work. You can use any kind of bread and toppings you like but the variety I am using works well for me!

Here is what you need:

4 Slices of bread (I use a multi seeded wholewheat type but you can use whatever you want)

160g egg whites from a carton

1 tsp of stevia

1 tsp cinnamon

Topping:

1 tablespoon almond butter

Fresh fruit

Walden farms pancake syrup

All you need to do is mix the egg whites, stevia and cinnamon in a bowl. Heat up a frying pan and put in a teaspoon of coconut oil to cover the bottom. Now dip each slice of bread into the egg mixture and allow it to soak up the liquid nicely. Do this evenly for all 4 slices and place in the frying pan. Fry on each side for a couple of minutes until they are nicely golden brown.

Remove, put on a plate and top with your almond butter, fresh fruit and pancake syrup. Make sure to take a nice picture and share it with your friends so they know just how enjoyable a healthy breakfast can be.

This whole recipe only comes in at 540 calories so you can enjoy knowing that you will be well within your daily calorie goals!

Don’t forget you can use any toppings you like, cookie butter, blueberries, chocolate chips, nutella, honey, even ice cream if you want a real treat. The combinations are endless.

Diet versus healthy diet

How every time, every-single-time someone asks me if I’m on a diet and I say yes, they give me this awkward look, then ask me what’s wrong with me and try to convince me that it’s not good for me.

There’s a difference between the stereotypical diet which people have in their minds, and a healthy diet.

The stereotypical diet consists of:
-Very little food
-Starvation
-Water
-Vitamin pills

A healthy diet consists of:
-Grains
-Meat, Fish, Poultry
-Fruit
-Vegetables
-Dairy
-Healthy Fats
-Minerals (water, tea, fruit-infused water, etcetera) 

Does any of the food I’ve posted so far look terrible?
It sure as hell didn’t TASTE terrible, and in no way am I starving myself.

I honestly HATE how people judge the word ‘diet’ so dramatically now.

(From last night) Upper body was pretty sore, but I finished my 30 Day Challenges which were actually difficult. I didn’t have to extend it too much. 120 Squats, 55 Sit-Ups, 65 Crunches, 33 Leg Raises, 42 (+3) Sec. Plank x3, 9 (+11) Push-ups, & then added 60 Lunges.

Keep believing in yourselves. YOU must be your #1 motivator. Don’t be discouraged. If you ever need anyone to talk to; I’m here for you. ✌️💕😊

Week 2, Day 2: Breakfast!

1 egg (no yolk, because I HAAATE it!) on top of a bed of tomato salsa and wholemeal bread.

In case you’re too lazy to scroll down for the full recipe of the tomato salsa, here is a shortened, simpler version:

Ingredients:

-1 tomato, diced
-1/4th of an onion, sliced
-2 garlic cloves, diced
-A few parsley bits, washed and diced
-Olive oil

Method:

-Put the olive oil onto a hot pan (frying pan)
-Add the garlic and onions, leave for 1/2 a minute on high heat, until golden brown
-Add tomato pieces and leave on low heat for 6 minutes
-Add parsley and take off heat

Note: I haven’t added any salt or pepper since that’s already added to the egg. You might want to add a LITTLE bit of salt and pepper to the salsa, if you like c:

As for the rest, just toast a piece of wholemeal bread, add some butter (I love* the taste of unsalted butter), then add the salsa on top, and finally the egg.
