GINGER-PUMPKIN SOUP

Make the most of the fall harvest with this Ginger-Pumpkin Soup recipe. It’s low in calories and loaded with antioxidants and vitamins making it a healthy and delicious fall option.

First, combine the pumpkin puree, chicken broth, and pear nectar in a saucepan, bringing it to a boil over high heat.


Then, cover, reduce heat to low, and simmer 10 minutes.


In a blender, process 1 cup pumpkin mixture with peanut butter until smooth. Return to saucepan with the remaining pumpkin mixture. Add the remaining ingredients into the pan; cook 10 minutes over medium heat. YUM!

I don’t have much time to eat, and in an attempt to stop myself from not eating at all I’ve started bulk making my meals.
This is a veggie stew, with mung beans, pinto beans and green lentils. Really healthy and really wholesome and I have enough for the whole week which is really needed. 3 full days at uni (21 hours) and 28 hours at work this week means I have literally no time at all for anything.

Vacation yoga is my favorite, it’s one of the few places when I feel absolutely timeless, absolutely without restriction. Even when I carve out time to practice yoga at home, it’s always bookended with responsibilities and trying as hard as I can, those never really fade. But what I CAN do, what I DO do, is notice those weightless, timeless moments, and make all I can of them so that later, when I’m not really able to be free, I can still take joy from the memory of when I ways.

Nutrition “Buzzwords”.

Most mornings, I drink a green tea and a green juice or smoothie alongside oatmeal or a bagel and cream cheese. But this post made me think twice about all the chemicals that could be lurking in my tea. I have since switched out my Bigelow Green Tea (one of the worst offenders) to Numi Green tea, but I started to notice how tea is marketed as “good for you” without going any deeper. It made me think about all the food that people automatically think is “good”, but really isn’t. And it has a lot to do with the language on the labels. The words below are not necessarily “bad”, but they are ‘buzzwords’ that companies use to market products as more healthy than they really are. These types of words also allow companies to  raise product prices by up to 30% more

Words/phrases to Watch out for:

  • "All Natural" -  As long as food does not contain “added colors, artificial flavors or synthetic substances” — it’s considered ‘all natural.’ This means that food containing high fructose corn syrup or preservatives can technically be considered all natural. 
  • "Organic" - Just because it is organic, it doesn’t make it healthy. Take cookies or cakes, for example. They can easily be made with all organic ingredients and still contain large amounts of sugar or fat.

  • "No Sugar Added" - A product can already contain loads of natural sugar (in fruit drinks for example) without any sugar being added to it. 
  • "Fat Free" -  Not only are some fats good for you (like Omega-3 fatty acids), but some ‘fat -free’ products can contain a lot of calories making the product almost as bad as the full fat versions. 

  • "Made With Real Fruit" - Made from ‘concentrate’ is not the same as being made from real fruit. As well, products claiming to be made with “real fruit” can contain varying amounts of actual fruit. You could get 2% of real fruit or 100%. You never really know, and they don’t have to tell you.
  • "Free-Range" and "Cage Free" -  While you may feel like your chicken is much healthier if it has these labels slapped across the top, the truth is “there are no requirements for the amount, duration, and quality of outdoor access” when it comes to chicken. This means that technically (but lets hope not), a farmer can let the chickens roam for 10 minutes on an air polluted farm and call it “free-range”.  

  • "Multi-grain": Multigrain products are usually highly refined (re: why they are called multi - grain), which strips away many of the nutrients that make it healthy. This sometimes makes the product as nutrient less as white breads and grains. The brown color is also not an indicator of health as sometimes caramelized color is added to products to make it “look” healthy. Look for products made with  ”100% whole grains” instead.

Words/Phrases TO Look for (the more, the better):

  • GMO free (Genetically Modified Organism)
  • Hormone free  
  • Organic (This word is also listed above because it’s a buzzword. But foods labeled organic means that it is “95% or more certified organic; free from synthetic additives like pesticides, chemical fertilizers, dyes and is not processed using industrial solvents or genetic engineering.” And that is good!)
  • Whole Wheat  
  • Preservative free  
  • No Artificial Dyes 
  • No Artificial Flavors
  • Grass fed 
  • No High Fructose Corn Syrup
