my fiance and i made these for lunch today! :) a friend posted this on facebook, we made half a recipe and altered it a little to fit us.
Facebook Version :: Our Half Altered Version -3 mashed bananas :: 1.5 mashed bananas -1 cup vanilla almond milk :: 1/2 cup unsweetened coconut milk -2 eggs :: 1 “flax egg”(my fiance is vegan, easy fix!) -1 tbsp baking powder :: 1/2 tbsp baking powder -3 cups oats :: 1.5 cups steel cut oats -1 tsp vanilla extract :: 2 tsp (to make up for vanilla almond milk) -desired amount of blueberries
380º for about 20 minutes, afterwards you can put it on broil for a minute or two for a nice finish with crispy edges. we also sprinkled a little cinnamon on top.
in the photo we had some crunchy organic peanut butter (which was absolutely delicious with it) but what we liked even more was our unsweetened organic apple sauce. AMAZING! super quick and simple recipe. our version made 7 medium size muffins that were just under 100 calories a piece.
