Healthy Donuts…Holla!

Friday just got a whole lot happier after I discovered this Eat Clean Diet Recipe for Blueberry Cake Donuts with Coconut Icing *Happy Dance*!


¼ c + 2tbs (42g) almond flour
2 tbs (14g) coconut flour
2 tsp (10g) psyllium husk (could sub flax or mila)
1/4c baking stevia (or coconut sugar for paleo)
½ tsp baking powder

1 large egg
2 large egg whites
1/4c + 2tbs coconut milk (or milk of choice)
1 tsp pure vanilla extract

1/4c + 2tbs (69g) dried blueberries (no sugar added)

1 tbs (7g) Coconut Manna

You Will Need: 

donut pan
non stick spray/ coconut oil



1. Pre heat your oven to 350 degrees.

2. Spray your donut pan with non stick spray (or coat with coconut oil).

3. In a bowl combine all your dry ingredients: almond flour, coconut flour, psyllium, stevia and baking powder.

4. In a second bowl whisk together your egg, egg white, vanilla and coconut milk.

5. Combine your wet and dry ingredients. Mix well.

6. Fold in your dried blueberries.

7. Divide the batter evenly among 4 donut molds.

8. Bake for ~ 29 minutes or until the spring back when touched.

9. Melt Coconut Manna (or coconut butter of choice) for about 30 seconds in the microwave.

10. Drizzle coconut butter over your donuts.

Banana donuts Ingredients:
• 1 large mashed ripe
• 2 TBS nutbutter of choice
• 1⁄2 cup agave or honey
• 1 egg (room temperature)
• 1⁄2 cup oat flour
• ¼ cup + 3 TBS cocoa
• 1⁄2 tsp baking soda

• Preheat oven to 350 F
• Mash banana well with a fork or spoon
• Mix together wet ingredients,
then add dry
• Pour into donut pan (or if you
don’t have a donut pan, use muffin tins!) and bake for 12-15 minutes, or until a knife comes clean!

My new kitchen toy: Donut pan 😆😆😆! First experiment. .. Banana Bread Protein Donuts with White Chocolate Protein Frosting. Amazingly delicious 😋😋🍩🍩🍩! Came out slightly spongy with a muffin texture but still yummy and hit the spot! Not bad for first experiment at all👍👍!

Let’s face it, everyone loves donuts!!! But for those of you who are like me and want to lose weight, stay in shape, and eat healthy, donuts are a big no-no. Until now.

This is a recipe for the most delicious donuts you will ever eat.  I promise.  They are soft, moist, flavorful, and baked. Not fried. They are a great quick breakfast or snack on the go.  I bring them to school with me all the time, and let me tell you, I have to protect it or else someone will steal it while im not looking. 


  • 1 cup Mashed Ripe Banana (Roughly 2 small bananas)
  • ½ cup Raw Cane Sugar
  • ½ cup Fat Free Greek Yogurt (I use 0% Fage)
  • ¼ cup Unsalted Butter (Melted)
  • 2 Eggs (Room Temperature)
  • 1 teaspoon Pure Vanilla Extract
  • 2 cups Spelt White Flours (You can also use AP Flour)
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 cup Chocolate Chips (I used ½ dark chocolate chips and ½ milk chocolate chips)


1. Preheat the oven to 325F

2.Using your electric mixer with the whisk attachment, add the mashed banana, sugar and greek yogurt. Mix until incorporated.

3.Add melted butter, eggs and vanilla extra and mix.

4.Add flour, baking powder, baking soda and salt to the batter and mix until just incorporated. Do not over mix!

5.Using a spatula, fold in the chocolate chips.

6.Scoop the batter into a zip lock bag and seal shut. Using scissors, snip the bottom corner of one side of the ziplock bag to create your homemade piping bag.

7.Grease your doughnut baking pan and pipe ¾ full the batter into each doughnut mold.

8.Optional: Sprinkle cinnamon and sugar mixture on top of each doughnut batter before baking. Or you can dip the doughnuts once baked in the cinnamon sugar mixture. You may need to paint melted butter on top of each doughnut before dipping the doughnuts in the sugar mixture to allow them to stick. Both options work perfectly.

9.Bake for 12 to 15 minutes. Remove from the pan and allow to cool before eating.

One of these recipes makes EXACTLY a dozen donuts using your normal size donut pan.

I also made a pumpkin version of these.  I added about half a can of organic pumpkin puree instead of banana and chocolate chips.  SO GOOD!  I did have to cook them for an extra minute or two.

For breakfast I made my version of @Pbeechie’s Breakfast Donuts (based on one of the recipes on her website) with 80g gala apple🍎 slices and a Dark Chocolate🍫 Cream Cheese Fluff☁️!!
Peanut Donuts🍩: 47g (1/2cup) oat bran, 2tbs peanut flour, 1tbs almond flour, 2tbs unsweetened applesauce, 3 egg whites (I used two last time – decided to use 3 like Kim does, and it makes a difference!), water (added until it wasn’t so solid), 1/2tsp baking powder, cinnamon, stevia) - bake at 350F for 10 minutes in a donut pan. I bought my donut pan at Bed Bath & Beyond!
Dark Chocolate Cream Cheese Fluff: 1/4cup plain nonfat greek yogurt, 1tbs unsweetened special dark cocoa powder, ~1/4tsp (eyeballed) cream cheese bakery emulsion, cinnamon, stevia.
I paired this with a Coconut🌴 Cream🍶 Frothy Coffee☕️!
