Cookie Dough Overnight Oats with a Cookie Dough Crumble topping! This morning’s breakfast was probably my favorite overnight oat parfait variation ever, such a treat! Last night I prepped my oats: 1/3c oats mixed with vanilla stevia, cinnamon and 2/3c to 1c of water, microwaved for a few mins, stir, do it again until most of the liquid is gone, then I add my flavorings. In went some vanilla, more vanilla stevia, chia seed and the secret ingredient for cookie dough oats: a tiny splash of banana extract! Usually mashed banana gives that cookie flavor, but I didn’t want the sugar/carbs of banana when I didn’t need them since it’s a rest day for me. I took a gamble, added banana extract and the results were even better than what I imagined. It just adds that extra oomph, almost the buttery kind of sweetness of raw cookie dough. Then I added 1 tbsp chia seed and 1/3 to 1/2 c almond milk, in the fridge overnight. In the morning, I mixed a serving of Greek yogurt with vanilla stevia, vanilla extract and cacao nibs, then got to layering! For the cookie dough crumble: 1 tbsp coconut flower, vanilla stevia, almond milk. I didn’t measure I just kept adding milk until it made little crumbles, then threw in cacao nibs and then a few dark chocolate chips on top. The coconut flour cookie dough crumble is so good I’d honestly my it up and just eat it straight with a spoon. Im actually really glad I decided to give that a shot this morning bc I crave cookie dough all the time and this stuff tastes amazing, totally hit the spot!!!! Pumpkin pie sandwiched between two chocolatey cakes that’s full of protein, gluten free, high protein and even paleo approved?!? Yup! For the cakes: 1 scoop vanilla protein powder, 1 tbsp cocoa powder, cinnamon, 1/4 tsp baking powder, stevia, 3 tbsp pumpkin, 1/2c egg whites whisked and baked at 375 in 2 mini round pans. For the filling: this is to be prepped the night before. 1/4 c pumpkin, 1 tbsp chia seed, 1/4 tsp blackstrap molasses, pumpkin pie spice, 1/2c almond milk (will reduce to 1/4 next time though, filling wasnt as firm as I wanted), cinnamon, stevia, couple of raisins. Let sit in fridge overnight. Assemble in the morning, top with sunbutter drizzle and cinnamon and feast! About 380 calories, 35g carbs, 43g protein. Blueberry Protein Puff Pancake topped with Greek Yogurt, berries, half a banana, PBU and sunbutter drizzle!Unintentional WIN this morning! Didn’t plan breakfast, but saw a super easy protein pancake recipe from @getfit_feelsexy. I wanted a puffy pancake, though, so I adjusted the recipe and created this GIANT puff pancake! I’ll make a post for the blog later, but here’s the recipe now bc I know I’ll get asked lol 3/4 cup egg whites, 1 tbsp Greek yogurt, 1/2 scoop protein powder, 1 tbsp coconut flour, cinnamon/stevia/vanilla/baking powder whisked together and cooked, covered, in a small pan on med heat. When it’s almost ready to flip, add blueberries, cover and cook for a min, then flip! it was delicious!!! Introducing: The Sweet Egg BAKE! Y’all know I love my sweet omelets, but there’s something about a breakfast bake that just has my breakfast loving heart. What doesn’t is the carbs and lack of protein. So, taking the traditional egg omelet and tweaking it a bit, I made it into a bake! This one in particular is a Blueberry Cheesecake Sweet Egg Bake. I will post the recipe and TONS of food porn on my blog later. The tweaks I made to up the protein was the addition of half a scoop of vanilla protein powder. The ‘cake layers’ tasted just like vanilla cake batter! I also used vanilla flavored stevia, the filling is Greek yogurt and I topped it with @ohsheglows blueberry chia jam and, of course, a drizzle of sunbutter. This was unreal. Protein Waffles drenched in a Cherry Almond Glaze that’s free of any added sugars, topped with a blob of almond butter. This kicks off day 2 of the #paleo experiment, however these are made with whey protein, which seems to be a bit of a gray area in the paleo-verse from what I’ve read. Thoughts? Sometimes a girl just wants a giant stack of pumpkin pie pancakes, okay? So, that’s what I did, but I earned them first with a quick 3-mile out and back at the beautiful hour of 6am :) ah I missed rising and running!! Then I whipped this together, again with just memory of various recipes mashed together. Why one giant pancake and 3 babies? I got impatient, I put the heat too low on the griddle, so while they took eons to cook I whipped out a baby pan and cooked the rest of the batter all at once. Made for one HUGE and fluffy pancake! Made a ‘cream’ filling with coconut milk yogurt. Topped with the signature drizzle of sunbutter! FINALLY able to share this gem from this morning! Chocolate Cake Batter Banana Bread N’Oatmeal topped with cherries, Crunchy Vanilla Sunrise Gf cereal and a blob of dark chocolate PB, you know in case there wasn’t enough chocolate ;) Not my prettiest breakfast but definitely one of the most delicious! Dinner tonight: Nori rolls stuffed with tuna+cottage cheese+dijon+nooch+tomato+spinach and a side of sautéed sprouts+broccoli+carrot. Added goat cheese to one of the rolls, which honestly looked better than it tasted, just can’t get over the fishy mess of nori rolls, I tried lol forgot to season the tuna too though. #lunch today was my first attempt at a gluten-free savory Wafflewich. It was delicious, but the recipe isn’t perfect and definitely needs a second go, so I won’t be sharing it just yet! The waffles had great flavor, but because I used coconut flour they were too fluffy. They stuck to the pan a bit and came apart slightly, so I waited for them to cool before carefully peeling them from the waffle iron, then I threw them in the toaster which saved them, I think. My Wafflewich had tuna mixed with chopped onion, 1tbsp Greek yogurt, nooch, sriracha sauce and walden farms honey Dijon dressing. It wasn’t a total fail, I finally ate a sandwich for lunch, I’ve been craving one forever! It held up for the most part, and it’s high fiber, low cal and low carb with a nice dose of protein!
