Chocolate-Mint and Berry Nice-Cream

  • 3-4 bananas
  • cacao powder
  • mint extract
  • 1/4-1/3 cup mixed berries

Chocolate-Mint Nice Cream

  1. blend 1 1/2 - 2 bananas in a high powered food processor or blender. scrape down the edges every down and then until the banana is creamy.
  2. add your 1-2 tbsp of cacao powder (1 is enough for me), and just a small amount of the mint extract 1/4-1/2 tsp. blend well.
  3. fill jar with nice cream and place in the freezer to harden.

Berry Nice-Cream

  1. blend 1 1/2 - 2 bananas in a high powdered food processor or blender. once the bananas are crumbled, scrape down and add the berries.
  2. blend berries and bananas until smooth and creamy.
  3. fill jar with nice cream and place in the freezer to harden.

So tasty and filling! A great way to curb sugar cravings!

Hey everyone! its food fridays again heh. today, I got a wonderful low calorie treat for all of you - chocolate meringue cookies!

at only 11 calories per cookies OMG I can totally binge on them just kidding


6 egg whites, room temperature
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 1 /2 teaspoons pure vanilla extract
1/4 cup unsweetened chocolate cocoa
1/2 cup granulated sugar
1 teaspoon unsweetened cocoa powder
1/8 teaspoon ground cinnamon


Preheat oven to 250 degrees F. Line cookie sheets with parchment paper or use the Silicone Baking Mats to prevent the cookies from sticking.

In a small bowl, combine the 1/4 cup cocoa and sugar together; set aside.

In a large bowl using your electric mixer, beat egg whites until foamy/frothy. Check out How To Make A Perfect Meringue. While beating to the frothy stage, add salt, cream of tartar, and vanilla extract. After reaching the frothy stage, add the cocoa/sugar mixture (1 tablespoons at a time) while continuing beating until the egg whites are stiff and glossy.

Drop batter by tablespoonfuls onto prepared baking sheets (1-inch apart).

In a small bowl, combine the remaining 1 teaspoon cocoa and cinnamon. Using a sieve or a sifter, sprinkle mixture over the non-baked cookies.

Bake 90 minutes; turn off the oven, open the door slightly (secure with a wooden spoon), and allow cookies to cool in the oven. Remove from oven and store in a tightly covered (airtight) container.

Yields 50 cookies.

Each Cookie Totals - 0 Fat Grams, 2.7 carbohydrate grams, 10.7 calories, .2 WW Points

Almond Joy Baked Oatmeal

  • 1/4 cup gluten free quick oats
  • 1 tbsp cacao powder
  • 1/4 - 1/3 cup dairy free milk (I used almond milk)
  • 2-3 tbsp unsweetened coconut flakes
  • 2 tbsp crushed almonds (I used maple coated almonds)
  • 2 tbsp hemp hearts (optional)
  1. Preheat the oven to 350 F
  2. Mix the oats, milk, hemp hearts, and cacao in a bowl.
  3. Pour into a baking in or heat safe bowl, bake for 15 minutes.
  4. Pull the oatmeal out of the oven and add your toppings. Place the oatmeal back in the oven 3-5 extra minutes.
