Today I made cauliflower rice ! I wanted to substitute rice from my diet for a bit, in a bid to stay lighter and gain lean muscle mass.

Simply blitz cauliflower heads on a PULSE setting in a food blender and you are done! You may need to do it in two sittings as you can see.

Dry fry or put a small amount of oil in a pan and fry the rice. It tastes freaking divine. I added garlic, salt and pepper to taste.

Give this a go. Much better for you than white rice!

Asparagus, spinach, fresh garlic, and then radishes – that is how the harvest begins each year. Our onions grew through the winter and are almost ready to pull and the peas are three feet tall. Bees are pollinating the raspberry flowers, the Bibb lettuce heads are the size of your fist and small potato plants are poking out of one of our long, raised beds. Throughout the season we’ll enjoy tomatoes, carrots, parsnips, zucchini, crisp lemon cucumbers, fresh dill, cilantro, basil, parsley, little pumpkins, and string beans.

Here we go again.
