I had a really yummy, healthy, low fat vegan thai curry for lunch. 

Ingrediants:

  • Lots of veggies, I had: carrot, kale, brocolli, pepper, onion and spring onion (I forgot to cook the sweetcorn so didn’t have it oops)
  • Rice (I had brown rice but whatever you want is good)
  • Coconut milk (I used the alpro brand as it’s low in fat and really yummy)
  • Curry paste
  • Some herbs (dried or fresh is fine)

Directions:

  1. Chop up all the veg (or great if it’s carrot)
  2. Cook the rice 
  3. Mix 150-200ml of the coconut milk with a teaspoon of curry paste (or more if you want a spicier curry) and add the herbs 
  4. Cook the veggies in some water (as adding oil adds fat) 
  5. Add the coconut milk and curry paste mix to the veggies and leave to simmer for about 10 minutes
  6. Add the veggies to the rice on a plate
  7. Serve and enjoy

Of course, we all know curry didn’t originate from Japan~ It was brought to Japan by the British, (when India was still under their administration). It became so popular in the Japanese households because of its convenient preparation and storage, that it is considered a “national dish”! ヽ(‘ ∇‘ )ノ

Which form of curry serving do like like most: curry rice, curry bread, or curry udon (or any kind of noodles)?
