If you don’t like crispy salmon skin, what DO you like? This salmon and honey crisp apple salad was absolute perfection. Served on a bed of greens, tossed in a maple/soy vinaigrette and topped with shaved, fresh parmesan; this meal made for a lovely winter salad. The salmon completely dominated the dish but was nicely paired with the light, freshness of thinly sliced honey crisp apples. In each bite, was felt the flakey, buttery crunch of the skin; making way to the tenderness of the salmon meat. Adding a forkful of crunch from the apples, combined all textures and rendered flavors that ranged from salty to tart to sweet and pungent! (from the cheese of course). For something so simply plated, to be so extraordinarily complex to the tastebuds, is what really put me in awe. I ate everything. I regretted nothing. Delicious!!
