Amazing ants!

Watched last night about ants.  They actually have two stomachs.  One is for themselves and the other one is for storage so that they can bring it to their colony to feed the larvae!

Fulfilment in teaching-pass it on

I used to be a full time group exercise instructor in one of the biggest fitness company in the world.  IT came to a point that I needed to do it as a part time job since I have lots of things that I need to do.  As a dedicated instructor I always find time to help people achieve their aspirations in the gym and so with the new instructors who asked for my help to teach them what I know.  Just this afternoon when I was back in the gym after around 2 months because of a busy schedule, I attended one group exercise class.  The instructor was one of the trainees I trained before.  It was a nice class and I really did pumped my heart well.  Before the stretching the instructor announced in the class that he would like to thank the instructor who is there with the class.  I actually sat at the back of the group.  He then mentioned my name and he also admitted that I am his mentor.  Oh it really felt nice to be acknowledged with the things you have done for them.  How I wish I can do more to all my students not only in the gym but as well in the university and maybe one day successful people will also thank me.  :)  happy life… fulfilment even without the riches.  I just hope that the people who learned from me shall pass it on to those people who need the knowledge.  Happy teaching the world!

Chronicles of a Chef (England edition)-Rhubarb

This is an unusual vegetable for Filipinos.  I haven’t seen it yet here in the market but I find this useful not only in desserts but as well as in food styling.  My head pastry chef loves to use the skin of it, dry it, and make it into hair like pinkish strands.  We normally use it to plate our desserts to give it a height and interest.  I tried using celery and I think it worked well too.

Ang katotohanan sa pagbabago

Nakakatuwang isipin kapag ang isang tao ay nagbabago kapag may minamahal.  Maaring mabuti ang maidulot nito at maari din na masama.  Minsan tayo ay binabago ng ibang tao ayon sa kanila nais mangyari.  Ang iba naman ay binabago para mapabuti ang kanilang mahal sa buhay.  Sa anu mang aspeto ng pagbabago ang mahalaga ay nakakadulot ito ng kabutihan sa sarili at sa kapwa, nagpapamalas ng katotohanan, at nakikinabang ang karamihan.  Kaya ang dapat itanong sa sarili, para saan ka nagbabago?

Confessions of a Chef

Fell in love with a classmate but had no balls manligaw at puro tawag lang.  Ayun after couple of years she married my best friend and ginawa pa akong best man noong kinasal sila! How ironic isn’t it?
Almost 2am already

I didn’t notice that it is almost 2am.  I was recording grades because I need to encode the grades of my students tomorrow.  I am just a bit worried that there are a number of students who didn’t actually did well on their prelims and I am not sure if they did well with their midterms as I am still computing the grades.  Oh well I need to warn them as they still have 2 weeks to cope up or do special projects if needed.

My best wedding cake so far!

This is the “Sentinel of Prosperity”, UPHSD entry to the National Food Showdown 2011.  It won the highest award and the only entry to have gold award.  Thank you to my students like Grace Celosa, Arnie Bongcawil and Mark Panis for helping me.  For the 5 years of National Good Showdown, I have joined 3 times and have right now 2 silver medals and 1 gold!  Keep it coming! :)
Chronicles of a Chef (Philippine edition)

I started my career as a trainee in the Peninsula Manila Hotel in Makati City.  I was assigned in the main kitchen.  There I was trained with another student for St. Scholastica’s College.   There we but vegetables and tried to peel sacks of carrots.  After every duty I will notice the color of my hand and nails as they we stained by the carrots.  The one that I can remember the most was the first time I used the tool mandoline  I was not adept using it and accidentally while i was slicing the palm hearts I sliced my finger and saw blood everywhere.  I was scared that time and tried to  hide things and cover the bleeding finger and let no one notice that I am hurting already.  Maybe that time I don’t want to feel embarrassed of my mistake.  The lesson I learned from that is never be ashamed of our mistakes in life, these mistakes are our teachers which will make us a better person.  As long as we don’t get to do same mistakes over and over again and just learn from it.

Enjoying life with money! :)

Here they are again, bills!  Credit cards, electricity, cellphone, internet, house rental and etc.  The older we get the more complicated things are.  Life was very simple when we are younger but reality bites.  It is really a matter of choice and all the things that we do in life should be taken lightly.  Money will come every pay day and I guess life comes once in a lifetime!  So I will just enjoy life!

Why I love teaching?

In the Philippines teaching is not a profession where you earn that much money.  They always say that teaching is the noblest profession but is is enough to make it worth doing?  Let me counts the ways why I love teaching
  1. It is always pleasant to teach young minds and to tell you frankly I learn a lot from my students as well.  Amazing that even students can give you insights which you find true and meaningful.
  2. In the field of Hospitality Management there are only a few chefs who pursued their Masters degree and it makes me competitive in my own way.
  3. The teacher is like a celebrator in the classroom/laboratory.  The class will not start without him/her and it will not end unless he/she dismisses it.
  4. The teacher can be objective or subjective depending on the situation so never mess with him/her.
  5. In my field being a chef instructor with Masters degree pay well.  Even in other schools our rate may reach as high as those with Doctoral degree.  It is nice to be a Chef and a Professor at the same time.
  6. You may share insights that can make your students better.
  7. It is always nice to be credited by your successful former students.  The feeling is like winning the lottery.
  8. Even if it takes forever to compute the grades and to know that some of your students doesn’t deserve to fail, you will make a way and a consideration to pass them at all cost.
  9. People look up to you as if you are really a professional when all you know is that you are just a simple person with a simple joys as well.
  10. There is an endless learning in the teaching profession and for those who hunger that much knowledge, teaching is one you can consider.
Enamorada-Circa 2007 (National Food Showdown)

This was my first attempt to join a National Food Showdown for wedding cake, professional division.  It is a pure white cake with extensions and gold dragees.  I was working before with Ibarra’s Party Venues and Catering when I represented the company.  It gave me a SILVER award with 93 points, just 1 more point to get the GOLD.  The topper was nothing fancy since I didn’t have the time because I need to operate my department as well.   The entry I think that won GOLD was from Bellevue Hotel.  Its a good thing to look at the old files I have on my laptop.


Sa mga kupal ng mundo!

Naranasan mo na ba mainis sa mga tao na nagiisip ng mga bagay na hinde maganda laban sa iyo.  O kaya minsan ay ginagawan ka nila ng mga kwento?  Tapos kakalkalin nila ang istorya ng buhay mo para maymapagusapan lamang sila?  Ito kasi ang mga klase ng tao na walang magawa sa buhay.  Kung akala mo naman ay napakalinis ng pagkatao o napaka perpekto.  Bago sana tayo magbato ng putik sa ibang tao ay sana naiayos na natin ang buhay natin ng husto at ako ay sigurado kapag maayos talaga ang buhay ay wala na siyang oras para gumawa o mag isip ng masama laban sa kapwa niya.  Karma karma lang yan, at kapag kinulang ang lakas ng karma para pabagsakin ka, nandoon lang ako para bigyan pa ng suporta ang karma laban sa iyo! wahahaha! May kasama pang sapak!
