what you need: 1tbsp olive oil, 1 tbsp unsalted butter, 1 large yellow onion (sliced thin), 1 tbsp chopped thyme, salt and fresh ground black pepper, 3 cups flour, 3 tsp baking powder, 1/2 tsp baking soda, 1 tsp salt, 3/4 c butter (cold, cut into cubes), 1 egg (beaten), 3/4 cup cold buttermilk, 1 cup shredded cheddar cheese, 1 egg (beaten, for egg wash)
what you do:
preheat oven to 425*
heat 1 tbsp of olive oil and 1 tbsp butter in a pan over medium heat. add onions and cook down til tender and browned, stirring occasionally. remove from heat, set aside to cool
in a mixing bowl, sift together flour, baking powder, baking soda, and salt. cut in butter until mixture resembles coarse meal. in another bowl, combine the milk and egg and beat lightly with a fork. add to flour mixture all at once, along with thyme and pepper, mixing enough to make a soft dough.
add onions and cheese, blend together.
to make drop biscuits, roll handfuls (the size of a baseball) of dough til round(ish), place a few inches apart on an ungreased cookie sheet. brush with egg wash. bake for 12-15 minutes
