Here’s my attempt at Avocado Pound Cake! It turned out DELICIOUS and was a big hit with everyone :) Some improvements I might try next time are: adding lemon, and maybe even poppyseed into the loaf; using almond flour instead of regular flour; adding flaxseed; using a natural sweetner like stevia, honey or agave, OR an artificial sweetner for a lower-carb option. But really guys, you should try this out! It makes for a dessert you don’t need to feel guilty about. 

This is a tomato eggwhite lentil soup! I start by dicing an onion and cooking it a bit in the bottom of your soup pot in some olive oil. I then add in washed lentils (I usually do about a cup, but that depends on how big your pot is!) and fill with water until the pot is full, but with enough space to add some veggies in later. I also add in a few tablespoons of powdered bullion (to taste), a can of diced tomatoes and some tomato paste. I also add a bit of pepper and cumin. Once that’s come to a nice boil, I add in some veggies. Brussel sprouts, or peppers, or carrots, or broccoli.. whatever you like best! About five minutes before I’m reading to take it off the stove, I toss in three eggs. Sometimes I use just the whites, but if I want an even hardier soup/stew, I put the whole egg in. Stir the egg in quickly so it doesn’t cook as one whole egg in the middle of your soup. And voila! Enjoy :) 

Sweet potato chicken pot pie <3 with blackbeans, spinach, and carrots. Seasoned with ginger, cinnamon, cloves and nutmeg. Super yummy! I use crisco vegetable shortening, flour, salt and water for the crust. I then boiled sweet potatoes and carrots. You can boil lentils too for a vegetarian options. I already had some leftover chicken from the night before (I recommend cooking your chicken before putting it in the pie) so I cut that up and mixed that in with the mashed sweet potato. I added spinach, a can of beans and the spices mentioned above. Lastly, I added 2 eggs to help hold the inside together. I scraped the mixture out into the pie shell, put the lid on and baked it at 375 for a half hour. If you want a super golden shiny crust, use an egg yolk with some water in it to glaze the top! 


Last night’s dinner :) It was delish! I added the recipe I used above. As for the sweet potatoes, I seasoned the, with pumpkin pie spices! No sugar though, I relied on the sweet potato’s natural sweetness. Just some nutmeg, cloves and a lot of cinnamon and ginger! They’re to die for! The brussel sprouts are steamed, seasoned with some lemon juice, butter, salt and pepper :)
